Your Executive Chef Rafael Borbolla and his team have a new dining treat for you to try on your next Grand Residences vacation: Caribbean Night at Flor de Canela on Friday.

The tempting buffet includes dishes prepared with the exotic fruits and flavors of the islands with a hint of fragrant spices, coconut, plantain and rum.

For starters, help yourself to salad drizzled with tamarind or passion fruit dressing or fresh seafood ceviche with pineapple or mango and tuna, salmon and sea bass tiradito.

Hot dishes range from green banana and coconut soup, pork in dark beer and Cajun beef fillet to jerk chicken, salmon in mango and star anise sauce with sautéed spinach. Side dishes include Madras rice with plantain, pineapple, raisins and almonds, candied sweet potato and fried plantains.

From the show kitchen, try the breaded chicken brochettes, grilled beef and bell pepper brochettes and pastor-style pork brochettes with pineapple and onion. And because we are in the Mexican Caribbean, there are several tasty taco combinations on offer. Choose between fried shrimp, coconut and curry, octopus marinated in ajillo sauce and tuna carnitas or order a tostada piled with grilled shrimp.

Garnishes include Mexican salsas, chipotle, habanero and avocado dressing, diced onion and coriander, jicama, red cabbage and grated carrot.

Sweet temptations include the flavors of coconut, piña colada mousse, chocolate chiboust cream and caramelized bananas in rum, passion fruit fantasy and Caribbean tapioca. And after your meal be sure to order a glass of our finest island rum with coffee.
