Tasting notes: Acidic, slightly bitter notes enhance the explosive harmony of white flowers, apricot, rhubarb and mint with a hint of minerals. The vibrant flavors and effervescence linger and the finish has notes of ginger, tobacco and toast.

The origin of champagne

In 1688 Dom Pierre Pérignon, a Benedictine monk, was appointed to the Abbey of Hautvillers in the Champagne region of France. As he modernized the abbey, he restored the vineyard and set about making “the best wine in the world.” It was soon served at the palace of Versailles to King Louis XIV and became the favorite drink of the aristocracy.

The story goes that Dom Pierre came about the double fermentation technique used in champagne making by accident. When he first tasted the sparkling wine and felt the bubbles explode on his palate, he shouted to his fellow monks, “come hither, I am drinking the stars.”
