Grand Recipes
This month’s Grand Recipe is a classic from the Yucatan kitchen, Tzic de Res. Made with shredded beef, it would have originally been prepared by the Maya with venison cooked in a pib or cooking pit. Try it this December in Flor de Canela restaurant.
Tzic de Res
Ingredients
- ½ kg. shredded cooked beef, flank or fillet
- ½ onion
- 8 radishes
- Small bunch of coriander
- 1 serrano chili
- 2 Seville oranges
- Salt and pepper
Clean and disinfect the vegetables. Chop the radishes, onion, coriander and chili. Shred the beef (you can also use venison or pork fillet or leg in this recipe) and place in a bowl. Add the vegetables and pour in the Seville orange juice. Mix well and leave to rest so that the flavors to develop. Season well and serve.
