If one of your New Year’s resolutions to stick to a healthier diet, this nutritious salad from Chef Guido is a good way to start, it’s tasty, crunchy and packed with seasonal flavors.

Winter salad

Serves four people

  • 200g chestnut purée
  • 4 heirloom tomatoes
  • 1 frissé lettuce
  • 120g arugula
  • 50g pumpkin seeds
  • 100g sugar
  • 150g Castille squash
  • 1 lemon
  • Salt
  • Pepper
  • Honey
  • Truffle oil

Place the sliced squash in a baking tray with maple syrup and bake until soft. Leave to cool.

Mix the chestnut purée with salt and pepper. Place the pumpkin seeds in a hot frying pan and add the sugar, lemon juice and a little water, cook until caramelized and set aside.

Put the chestnut purée on a plate and add the baked squash, tomato wedges, lettuce and arugula, drizzle with a little honey, a few drops of truffle oil and a pinch of salt.
