Sensational Seasonal Flavors

Chef Guido de la Mora and his team can’t wait to welcome you home for the festive season. They have a sumptuous menu in store for you for Christmas and to ring in the New Year in style.

The Noche Buena or Christmas Eve dinner menu includes a festive Waldorf salad with cranberries followed by crab-stuffed ravioli with Nantua sauce. The choice of main courses is roast turkey with mushroom duxelles, mashed potato and date gravy or dried fruit-crusted beef tenderloin cooked to perfection with pont neuf potatoes and a white truffle sabayon. Dessert is a glistening Christmas sphere of mango jelly, raspberry and Callebaut golden chocolate with a hint of caramel.

New Year’s Eve dinner begins with Pacific oysters, Siberian reserve caviar and a creamy sabayon. There is duck salad to follow with cured yolk and olive oil caramel. For your main course order a lamb t-bone steak in cider sauce with grilled apples and aromatic carrot-cardamon puree or Grand Residences-style Chilean sea bass. A showstopper five minutes to midnight clock dessert is the perfect finale to a delicious meal.

Start 2022 with the New Year’s Day Brunch. The menu includes seasonal fruit and a smoothie bar so you can make your own combinations for a refreshing cool drink. Ask for waffles and pancakes and help yourself to freshly baked bagels, pretzels, bread and pastries. There are assorted cheeses and cold cuts, a seafood bar and omelettes and eggs to order. To add Mexican flavors to your brunch, try the traditional morning after dishes: birria stew, barbacoa and chilaquiles or munch on quesadillas. Be sure to ask for slices of the hanging BBQ roast leg of pork, so tender and juicy it literally falls off the bone.
